Ingredients

  • 60g oats
  • 1 banana
  • 2 eggs
  • 1 tbsp chia seeds
  • 50-100ml soya milk (or milk of choice)
  • 1 sachet of Bimuno Immunity
  • 1 tsp cinnamon
  • 1 tsp coconut oil


Toppings

  • 1 tbsp pecans
  • 40g raspberries
  • 40g blueberries
  • 100g kefir yogurt
  • 1 tbsp honey or maple syrup

Method:

  • Add the oats, banana, eggs, chia seeds, soya milk, Bimuno Immunity sachet and cinnamon to a blender. Blitz for around 30 seconds.
  • Heat a non-stick frying pan or skillet on a medium heat.
  • Once hot, add 1 tsp of coconut oil and move around the pan until melted.
  • Pour in the pancake mixture – you can do them as little of as large as you want. I usually like to make 3 decent sized pancakes.
  • Allow to cook for around 1 minute until nice and crispy. After 1 minute, flip and cook for a further 45 seconds. (This will depend on the temperature of your pan so keep an eye out. I don’t like my pan to get too hot)
  • Once cooked, stack and top with kefir yogurt, raspberries, blueberries, pecans and a good drizzle of honey.
