Ingredients
- 60g oats
- 1 banana
- 2 eggs
- 1 tbsp chia seeds
- 50-100ml soya milk (or milk of choice)
- 1 sachet of Bimuno Immunity
- 1 tsp cinnamon
- 1 tsp coconut oil
Toppings
- 1 tbsp pecans
- 40g raspberries
- 40g blueberries
- 100g kefir yogurt
- 1 tbsp honey or maple syrup
Method:
- Add the oats, banana, eggs, chia seeds, soya milk, Bimuno Immunity sachet and cinnamon to a blender. Blitz for around 30 seconds.
- Heat a non-stick frying pan or skillet on a medium heat.
- Once hot, add 1 tsp of coconut oil and move around the pan until melted.
- Pour in the pancake mixture – you can do them as little of as large as you want. I usually like to make 3 decent sized pancakes.
- Allow to cook for around 1 minute until nice and crispy. After 1 minute, flip and cook for a further 45 seconds. (This will depend on the temperature of your pan so keep an eye out. I don’t like my pan to get too hot)
- Once cooked, stack and top with kefir yogurt, raspberries, blueberries, pecans and a good drizzle of honey.
