Ingredients: Cake

  • 115g cup unsalted butter
  • 90g cup brown sugar
  • 4 large eggs
  • 95g coconut flour
  • 60g plain flour or 95g almond flour
  • 1 tsp baking powder
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1 tsp ground cloves
  • 1 tsp ground nutmeg
  • 1/4 tsp salt
  • 120ml water

Ingredients: Frosting

  • 500g cream cheese
  • 1 tsp vanilla extract
  • 1 sachet Bimuno
  • 115g caster sugar


  • Preheat oven to 170C (fan).
  • Mix your butter and sugar together into a thick paste.
  • Add your eggs and mix together.
  • Add your flour, baking powder, ground cinnamon, ground cloves, ground nutmeg and salt.
  • Add water slowly and mixto help to incorporate fully.
  • Place into a loaf dish with grease proof paper and bake for 45 minutes.
  • Whilst the cake is baking it’s time to make up your frosting.
  • Simply incorporate your cream cheese, Bimuno sachet, butter, sugar and vanilla extract.
  • Whip to create a lighter texture.
  • Use a spatula to ‘frost’ your cake (once at room temperature) or use a piping bag.
  • Enjoy!
