Ingredients: Cake
- 115g cup unsalted butter
- 90g cup brown sugar
- 4 large eggs
- 95g coconut flour
- 60g plain flour or 95g almond flour
- 1 tsp baking powder
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- 1 tsp ground cloves
- 1 tsp ground nutmeg
- 1/4 tsp salt
- 120ml
water
Ingredients:
Frosting
- 500g cream cheese
- 1 tsp vanilla extract
- 1 sachet Bimuno
- 115g caster sugar
Method:
- Preheat oven to 170C (fan).
- Mix your butter and sugar together into a thick paste.
- Add your eggs and mix together.
- Add your flour, baking powder, ground cinnamon, ground cloves, ground nutmeg and salt.
- Add water slowly and mixto help to incorporate fully.
- Place into a loaf dish with grease proof paper and bake for 45 minutes.
- Whilst the cake is baking it’s time to make up your frosting.
- Simply incorporate your cream cheese, Bimuno sachet, butter, sugar and vanilla extract.
- Whip to create a lighter texture.
- Use a spatula to ‘frost’ your cake (once at room temperature) or use a piping bag.
