Breakfast is often called the most important meal of the day and we’ll often reach for that bowl of cereals or porridge – but it can be an exciting mealtime too! Why not try Ghee Hollandaise & Spring Asparagus? It’s extremely quick and simple to prepare, packed with rich flavours and important nutrients for the body.

Our recipe takes just 15 minutes to prepare, making it just as quick as the usual tea and toast! It’s ideal for sharing brunch-style, and can be served with buttery scrambled eggs, soft boiled eggs or smoked salmon if preferred.

Ghee Hollandaise & Spring Asparagus – Serves 2


  • 250g asparagus
  • 100g ghee
  • 2 egg yolks  
  • Juice from ½ lemon
  • ½ tsp cayenne pepper 
  • 1 tsp sea salt
  • Freshly ground black pepper
  • 2 sachets of Bimuno® DAILY 
  • Sprinkle of chilli salt 


  1. Wash the asparagus thoroughly and break off the woody stems
  2. Steam asparagus stalks for 4 minutes
  3. Gently melt the ghee over a low flame but be careful not to boil
  4. Place egg yolks, lemon juice, sea salt, chilli salt, cayenne pepper and Bimuno® DAILY into a bowl and blend
  5. Slowly pour the warm, melted ghee into the bowl and gently hand-whisk to create an emulsion. The mixture will thicken quickly – add more lemon juice if you want a thinner consistency.
  6. Serve with the asparagus and simply enjoy!

Why is this good for the gut?

Asparagus is a particularly nutritious vegetable – low in calories but high in fibre (great for the gut!), folate and Vitamins A, C and K. It also contains minerals potassium and phosphorus. Egg yolks are believed to contribute to gut health by virtue of being easier to digest than other high-protein foods, such as red meats and legumes. Eggs are also a great source of methionine, an essential amino acid. The body uses essential amino acids to support cellular growth.

The recipe also includes Bimuno DAILY. Our prebiotic fibre supplement feeds and nourishes bifidobacteria, ‘good’ gut bacteria that are shown to support areas such as immune health, mental health and cognition. They can even influence how well we sleep! Please note – do not exceed the daily recommended intake of Bimuno DAILY, which is one (1) sachet per person, per day. The Bimuno DAILY in this recipe replaces your regular intake and should not be in addition to it.
