Know someone who thinks salad is boring? You’ll have them eating their words – along with second and third helpings – once you’ve treated them to this butternut squash and courgette salad with whipped feta.

Adapted from the Falastin recipe book, this is a salad that simply bursts with flavour – it’s both salty and creamy, there’s a beautiful crunch from the nuts, but there’s also the fresh zest of lemon, the gentle heat of Aleppo chilli flakes, aromatic coriander seeds and a generous helping of pistachios.

  • ½ small butternut squash, sliced lengthwise, seeds scooped out and cut into ¾-inch slices
  • 2½ tbsp olive oil
  • Sea salt and freshly ground black pepper, to taste
  • 450g courgette, cut into 8 slices
  • 1 tbsp honey
  • 2 garlic cloves, grated
  • 1 tbsp cider vinegar
  • 1 cup ricotta
  • 3 tbsp Greek yoghurt
  • 100g feta, roughly crumbled
  • 1.5 tbsp lemon juice
  • ⅓ cup pistachios, toasted and chopped
  • 1 tsp ground coriander
  • 1 sachet of Bimuno® DAILY
  • ¾ tsp Aleppo chilli flakes
  • ¼ cup mint leaves


  1. Heat oven to 250°C. Line two baking sheets with parchment paper. Set aside.
  2. Combine the butternut squash, 1.5 tbsp olive oil, ¾ tsp salt, and black pepper in a large bowl. Toss to combine. Spread the squash across one of the prepared baking sheets in a single layer. Roast for 25 minutes, turning the squash slices over halfway through. Remove from the oven and let cool slightly.
  3. Meanwhile, heat a grill pan over high heat and grease with olive oil. Combine the courgette, remaining tbsp of olive oil, ½ tsp salt, and black pepper in a large bowl. Toss to combine. Once the grill pan is hot, add the courgette to the pan and cook for 3 minutes or until there are grill marks on all sides. Transfer to the second prepared baking sheet and bake for 5 minutes.
  4. Whisk together the honey, half of the garlic, the vinegar, and ⅛ tsp salt in a large bowl. Add the cooked squash and courgette and stir gently to coat in the dressing.
  5. In a separate bowl, combine the ricotta, yoghurt, 65g feta, the lemon juice, the remaining garlic, ⅛ tsp salt, black pepper and one sachet of Bimuno® DAILY. Mix with a whisk until smooth. Spread the feta mixture on a large serving platter. Top with the courgette and squash. Sprinkle with the remaining feta crumbles, the pistachios, coriander, chilli flakes, and mint leaves. Serve immediately.

Why is this good for the gut?

Butternut squash is packed with nutrients and is high in fibre, which is great for the gut, helping digestion. It’s also a good source of vitamins C and E and minerals including potassium and magnesium. As well as this, courgette is rich in water and fibre, which can promote healthy digestion. Meanwhile, feta cheese, like other fermented foods, contains probiotics, which promote a healthy gut and support the immune system.
